Food protein digestion model in relation to age

Protein is one of the essential nutrients for human body, which maintains life activities and health. For certain populations, such as older adults and critically ill patients, it can be difficult to digest and absorb protein from the diet. Digestion involves a series of mechanical, physiological and biochemical processes that lead to the breakdown of food structures and ultimately allow for the absorption and utilization of nutrients. However, the process of food protein digestion can be influenced by age-related changes in the gastrointestinal system. Protein digestion is inhibited in the elderly due to deteriorating gastrointestinal function including slow movement and reduced digestion ability etc. Therefore, understanding the patterns of protein digestion in different age groups is of great significance for optimizing dietary structure for older adults.

This study attempts to establish a model to simulate the digestion of protein in relation to age, using in vitro digestion models, and validated by clinical MRI method. Results will be developed into a computational model to simulate protein digestion with aging. This model will provide a future platform to study protein digestion and absorption in relation to aging, which will guide nutrition uptake of older people.
